Chia Seed Vegan Raspberry Jam

350 g Fresh Raspberries
½ lemon juice
Zest of ½ lemon
30ml of water
30g Chia Seeds
1 Star Anise


Rinse and dry the fresh Raspberries.

Combine the raspberries with the lemon zest, juice and water in a small pan over medium heat.

Heat the mixture for about 25 minutes, stirring frequently and mashing the raspberries with a wooden spoon in order to release the moisture.

Add the Chia Seeds and the Star Anise and stir them into the Raspberry juice.

Remove the Raspberry Vegan Jam from the heat and let it settle for 10 minutes.

Pour the jam in a Glass Jar and let them cool down completely.
