Chicken Molé

Serves 4



4 chicken breasts, skinless and boneless

2 red onions, diced

1 green chilli, chopped

2 red peppers, diced

2 tbsp cumin

2 tbsp smoked paprika

1 tsp cinnamon

500ml bottle of beer

400g chopped tinned tomatoes

1 chicken stock cube

30g 70% dark chocolate

1 lime

1 handful of fresh coriander


Place a large non-stick pan onto a medium heat.

Add a drizzle of olive oil into the pan, then cook the chicken breasts for 3-4 minutes on each side or until golden brown.

Add the chopped onions, peppers and chilli and cook for a couple more minutes.

Sprinkle in all the spices, then pour in the bottle of beer.

Add in the tin of chopped tomatoes and a chicken stock cube.

Simmer for 30 minutes on a gentle boil to reduce the liquid and increase the flavour.

Finish the dish with dark chocolate, a squeeze of lime juice and some freshly chopped coriander.
