Doner Kebab

Serves 4-6

Ingredients:

400g Sausages cut out of the skins 

500g Minced Beef 

1 tbsp Salt 

1 tbsp Cracked black pepper 

1 tbsp Paprika 

1 tbsp Ground cumin

1 tbsp Fennel seeds 

1/2 cucumber seeds removed and diced 

1 tbsp Dried mint 

4 tbsp Greek yogurt 

1 Fennel bulb or 1/2 a small cabbage 

1 Red onion 

3-4 Radishes (optional)

1 lemon 

2 tbsp Olive oil 

Flatbreads 

300g Plain flour 

1 tsp baking powder 

3 tbsp of yogurt 

3 tbsp water (approx)



Method:

Add the sausage meat and minced beef in a bowl, then add the spices and mix together. 

Place the meat into a non-stick loaf tin and bake for 45 minutes at 160c or until fully cooked. 

Meanwhile mix together the flatbread ingredients until it forms a soft ball of dough, then leave to rest for 10 minutes. 

In a small bowl mix together the diced cucumber, yogurt and mint to make your yogurt dressing. 

To make the salad finely chop the fennel or cabbage, red onion and radish, squeeze over the lemon and a drizzle of olive oil before mixing together. 

Place the salad in a bowl ready to serve with the yogurt dressing. 

To make the flatbreads, divide the dough into 4 portions and roll out into flatbreads approx. 1cm thick. 

Pre heat a non-stick frying pan, then carefully lay one of the flatbreads into the frying pan and cook dry (Wirth no oil) for 2-3 minutes on each side, then turn and cook on the other side until golden. 

Remove the flatbread and repeat the process until all the breads are cooked. 

When the kebab is cooked, drain away any added moisture and transfer to a chopping board. 

Using a sharp knife carve the kebab meat and serve with the yogurt sauce, salad and flatbreads.
