Firecracker potato and chorizo kebabs

Serves 4

Ingredients

500g New potatoes

300g Pumpkin peeled and cut into cubes

200g Chorizo sausage

1 tsp smoked paprika

3 tbsp olive oil

Salt and pepper

8 Wood Kebabs sticks

Here’s how

Cook the potatoes in salted boiling water for 5 minutes, then drain and leave to cool.

Cut the chorizo into 2cm long slices and add to the cooked potatoes.

Add the diced pumpkin and drizzle over the olive oil followed by the smoked paprika, salt and pepper.

Mix all the ingredients together to make sure everything gets coated.

Using some wooden skewers divide the ingredients onto the sticks and place on a non-stick baking tray.

Cook in a preheated oven 170c for 25 minutes or until the potatoes are crisp on the outside and soft in the middle.
