Ingredients
2 cups fresh rocket leaves
1 yellow pepper, deseeded and sliced
½ red onion, finely sliced
½ courgette, sliced into rounds
handful of toasted sunflower seeds
2 garlic cloves, crushed
zest and juice 1 lemon
2 Tbsp. olive oil
Salt and pepper to taste
Method
Slice the courgette, onion and pepper then add to a bowl with the rocket. Mix the dressing by whisking together the garlic, lemon juice and zest, olive oil and some salt and pepper together.
Drizzle the dressing over the salad and sprinkle with the toasted sunflower seeds.
