Ingredients:
250g soft butter
250g caster sugar
4 medium eggs
2 limes
250g self raising flour
For the Drizzle:
25ml gin
50ml tonic
100g caster sugar
Method:
Beat the butter and sugar together in a mixing bowl until light and fluffy.
Add the eggs one at a time making sure you mix in each egg before adding the next.
Sieve the flour into the mixture, zest in the limes and fold together to make a cake batter.
Pour the mixture into a 2lb loaf tin and bake at 180c for 45-50 minutes or until fully baked and make sure the top of the cake is firm to the touch.
While the cake is baking mix the gin and tonic with the sugar to create a drizzle mixture, don’t heat up as you want the crackle from the sugar crystals on top of the cake.
When the cake has baked, leave to cool for 10-15 minutes before pricking the top with a fork to make lots of holes that will allow the flavour to flood the cake.
Pour the gin and tonic mixture over the cake and leave to crisp up.
Cut into slices and serve.
