Gluten-Free Spinach Pancakes


4 tbsp. gluten-free flour

2 eggs

250g spinach, wilted and excess water squeezed out

Salt and pepper to taste


Mix the flour and eggs in a medium mixing bowl. Stir in the spinach and season with salt and pepper

Heat the oil in a frying pan and depending on the size you like, drop mixture by the spoonful into the heated oil

Cook both sides until golden
