Ingredients:
1 red onion
Salt and pepper
20g butter
500g spinach
1 tbsp fresh or dried oregano
500g macaroni pasta
25g butter
25g flour
500ml milk
150g cheddar
2 beef tomatoes
50g feta
Method:
Cook the pasta in plenty of salted boiling water for 9 minutes, then drain and put to one side.
Meanwhile, heat a pan with a little olive oil.
Add the diced onions, season with salt while you cook for 2-3 minutes.
Add the washed spinach and cook for a further 4-5 minutes until wilted.
Remove from the heat and place in a sieve, using the back of your spoon press out all of the moisture.
To make the white sauce, melt the butter in a pan and add the flour.
Cook the flour and butter out for 2-3 minutes, constantly stirring.
Pour the milk in a little at a time, while stirring to avoid lumps.
Add the grated cheese and season with salt and pepper to your taste.
Mix the pasta and cheese sauce together with the remaining diced red onion.
Spread the cooked spinach on the bottom of an ovenproof dish.
Top with sliced beef tomatoes and season with a little salt and pepper.
Spoon out the mac and cheese to cover the tomatoes, then top with crumbled feta cheese.
Bake in the oven 180°C for 25 minutes until golden and bubbling.
