Healthy Grilled Salmon

Try serving this salmon with a salad of thinly sliced fennel, crisp apple and watercress. Drizzle with lime for an extra citrusy flavour kick.

Serves 4.


4 x portions of fresh salmon fillet 

1 tsp oil 

1/2 tsp salt 

1/2 tsp pepper 

1 lemon 

1 lime for serving


Season the salmon fillets with the olive oil, salt and pepper.

Pre-heat a grill pan for 2-3 minutes on a medium heat.

Place the salmon skin side down and cook for 5 minutes.

Turn the salmon over and cook for a further 5 minutes.

Cut the lemon in half cut side down in the pan. 

When the fish is cooked remove from the grill along with the lemon halves and leave to rest for 2 minutes before serving. Squeeze the lemon over the salmon. Add lime if desired.
