Lemon and Garlic Scallops


6 large scallops

2 tbsp. salted butter

Rock salt

Black pepper, ground

1 lemon

A sprig of thyme

3 Spring onions, finely sliced


Sprinkle the scallops with the ground pepper and salt and keep to one side

Heat the butter in a large fry pan

Add the garlic, spring onions and juice from one half of the lemon

Cook for 2 minutes

Add the thyme, stir and slice the other half of the lemon and add to the pan.

Gently add the scallops and cook for 2-3 minutes each side

Serve and enjoy!
