Mango and Mint Lemonade


Mango and Mint Lemonade


1 ripe mango, peeled and pit removed
5 Tbsp. water
Juice of 2 lemon juice
8 Tbsp. sugar or sweetener
2 pints of chilled water
Ice, for serving
Small bunch of mint


Gently bruise half of the mint leaves with a pestle and mortar and place inside a lose tea infuser. Place the infuser inside a pitcher and pour over 2 pints of water. Chill for at least an hour in the fridge.

Using an electric blender, puree together mango pieces with 5 Tbsp. of water until smooth.

Pour the puree into a large pitcher and add the lemon juice and sugar. Stir well until combined.

Remove the chilled mint water from the fridge and discard the used mint leaves. Pour the mint water over the puree and stir well before serving with ice and fresh mint leaves.
