100g flaked almonds
80g pecan nuts
60g preserved orange
70g dried mixed berries
50g glace cherries
25g plain flour
45g salted butter
80g brown sugar
60g golden syrup
1/2 tsp sea salt
200g dark chocolate
Method:
Mix the almonds, pecans, preserved orange, berries and cherries, then add in the flour and stir together.
Meanwhile melt together the butter, golden syrup and sugar.
Turn the heat up and let the mixture come to a boil, and stir for 30 seconds, then carefully pour over the fruit and nut mixture.
Stir the mixture until all the flour disappears, then divide into eight large portions or 16 smaller ones.
Once the mixture is cool enough to handle, roll the mixture into balls and flatten them down on to a non-stick baking tray.
Bake at 160°c for 12-14 minutes for the large ones and 8-10 minutes for the smaller ones.
Once baked remove from the oven and leave to cool for 10 minutes.
When the florentines are cool and firm, spread with melted dark chocolate and sprinkle with sea salt flakes.
Place them on a cooling rack and leave to set.
