Pumpkin Seed Soda Bread


400g self raising flour
50g wholemeal flour
1 tsp salt
1 tbsp brown sugar
1 tsp bicarbonate of soda
4 tbsp pumpkin seeds
400ml whole milk
1 lemon the juice of
1 tbsp olive oil


Add both flours into a mixing bowl and blend with salt, sugar, bicarb and pumpkin seeds.
Make a well in the middle of the flour and pour in the milk, lemon juice and oil.
Stir the bread dough together using a silicone spoon until you form a soft dough.
Transfer the soda bead onto a lightly floured surface and shape the bread into a loaf shape.
Lift the bread into a MasterClass loaf tin.
Pre-heat the oven to 180°c.
Score the top of the bread with a bread knife and bake for 40 minutes until golden brown and crisp.
Tap the underside of the bread to check if it's fully baked, if it sounds hollow its baked,if the sound is more of a dull thud, return the bread to the oven for 10 minutes at 150°c
