Raspberry  Brie  Crostini  with  Basil  Oil


For the basil oil

200 mL Extra-Virgin Olive Oil

10-15 leaves of basil

1 garlic clove

A pinch of salt

For the Raspberry Brie Crostini

200 g Brie Cheese

12 baguette slices

150 g Raspberry


Wash the basil leaves with cold water and dry them with a kitchen towel.

Place basil in a blender with the olive oil, garlic clove and a bit of salt.

Blend to fine puree.

Preheat oven to 175ºC.

Slice the baguette into 1 cm 12 slices and put them on a wire rack in the oven.

Bake the bread slices for 6-8 minutes with an oil tablespoon on top.

Cool them completely before serving.

Top the crostini with shavings of Brie cheese and place couple of raspberries on top.

Drizzle the Raspberry and Brie Crostini with the basil oil
