Ingredients
100g butter, softened
220g caster sugar
2 eggs
2 tbsp red food colouring
190ml buttermilk
300g plain flour
2 tsp baking powder
2 tbsp Cocoa
For the icing and devil horns
125g white icing
Black gel food colouring
150g softened butter
2 tsp red food colouring
320g icing sugar, sifted
1 tbsp milk
Method
Preheat oven to 180°C. Line a 12-hole cake pan with paper cases.
In the bowl, beat butter and sugar until light and creamy. Add egg, beat until well combined. In a jug, mix food colouring and buttermilk. Pour half into butter mixture with half of the sifted flour, baking powder and Cocoa, mix well. Add remaining buttermilk and sifted dry ingredients and mix until well combined.
Divide mixture evenly into prepared pan, bake for 20- 25 minutes. Cool.
Dust a clean work surface with icing sugar; knead ready-made white icing until smooth and pliable, dot with black food colouring using a toothpick and knead to blend colour through, adding more food colouring until desired colour is achieved, carefully mould out 24 horns, set aside until hardened.
Beat extra butter until pale and creamy. Gradually add icing sugar mixture and milk, add red food colouring, beat until light and fluffy. Using a piping bag fitted with a round nozzle, pipe swirls on top of cakes, top with horns and serve.
