Ingredients
3 tbsp. dijon mustard
1 tbsp maple syrup
1 tbsp apple cider vinegar
2 tbsp olive oil
Pinch of fresh thyme leaves
Pinch of salt and pepper
Method
Preheat the oven to 200°C
In a large roasting pan, add your chosen vegetables
In a small bowl, whisk together the mustard, maple syrup, vinegar and oil
Pour the mixture over the veg making sure they are evenly covered
Sprinkle the salt, pepper and thyme over and shake gently to make sure all the veg is covered
Bake in the oven for about 30 minutes, shaking halfway through
