Toffee Apples


15 apples

400g caster sugar

350g golden syrup

350ml water

Lollipop or Cake Pop sticks

Toppings (chopped nuts, flaked almonds, hundreds and thousands)


Lightly grease two baking trays and insert lollipop or cake pop sticks an inch deep into the top of each apple.

In a medium saucepan over medium-high heat, combine sugar, golden syrup and water. Heat to 149˚C to 154˚C or until a small amount of syrup dropped into cold water forms hard, brittle threads then remove from the heat.

Holding the apple by its stick, dip into the syrup and remove, turning to coat the apple evenly then place on prepared trays. Sprinkle on your toppings and leave to set.

For something a little different why not replace the golden syrup with dark treacle for a deeper taste or for a rose red shine add a few drops of red food dye to the sugar, syrup and water before you start to heat it.
