Turkish Flatbread


500g strong white bread flour
10g dried yeast
10g salt
325ml water

1 400g tin of chopped tomatoes
1 clove garlic
1/2 tsp mixed herbs
Salt and pepper

500g minced lamb
Salt and pepper
1 tsp dried oregano
1 tsp nigella seeds
1 tsp ground cumin

1 red onion
2 beef tomatoes
1 tbsp apple cider vinegar
2 tbsp olive oil
1 handful flat-leaf parsley
150g feta cheese
1 pomegranate
1 tsp dried rose petals


Place 100g of flour into a bowl with one teaspoon of yeast and 150ml of water and mix, then leave out on the side for 1 hour to begin fermenting.

Weigh out the remaining flour, yeast, salt and water and mix with the already fermented flour mixture.
Mix the dough with your hands until you have a soft ball of dough, then transfer to a lightly floured work surface and knead for 10 minutes until smooth and stretchy.
Roll the dough into a ball and cover with the mixing bowl, then leave to relax and prove for 30 minutes.

Cut the dough into 2 portions and roll into balls, then roll out into boat shapes and transfer to a non-stick baking tray.

Cook the minced lamb in a little olive oil and season with salt, pepper, dried oregano, nigella seeds and cumin.
Cook for 10-15 minutes until brown and the excess liquid has evaporated.
Meanwhile, finely dice the red onion and tomatoes and add them to a mixing bowl.
Add the vinegar and oil, then the chopped parsley.
Mix and add half to the cooked lamb.
Pour the tinned tomorrow into a sieve and allow the excess liquid to drain out.
Transfer the tomatoes into a bowl with the garlic, herbs and seasoning.
Divide the tomato mixture between both the beads, then top with the lamb mixture.
Bake the flatbreads in a preheated oven 190°c for 20-30 minutes.
Dice the feta cheese and mix it into the remaining salad.
When the flatbreads are cooked top with the tomato and feta salad.
Sprinkle with pomegranate seed and rose petals.
