Vegetable Pastry Tart


1 Large Puff Pastry Sheet

1 Small Red Onion

1 Small Brown Onion

½ Cup of Mixed Peppers

½ Cup Spinach

35g of parmesan Cheese

2 Tbsp. Vegetable Oil


Salt and Pepper to taste



1.       Roll out your puff pastry sheet ensuring you leave an inch border around all of the sides. Pierce the rest of the pastry with fork, this will prevent the centre from rising when in the oven.

2.       Place the puff pastry on to a baking sheet lined with a silicone mat.

3.       Add all veg ingredients in the middle of the pastry, ensure you avoid the edges of the pastry.

4.       Add Parmesan cheese and salt and pepper to taste and Bake away for 15 – 20 minutes, until pastry is golden brown.

5.       Remove from the oven and enjoy!
