Ingredients
2 tbsp olive oil
2 medium red onions diced
4 Sweet potatoes peeled and finely diced
1 tsp salt
1 tsp dried chilli flakes
1 tbsp Ground cumin
2 tbsp Smoked Paprika
500ml Beer
410g Lentils drained and washed
400g Tinned chopped tomatoes
30g 70% Dark chocolate
12 small soft wheat tortilla
70g Grated cheddar cheese
50g Sour cream
1 Lime
Method:
Pre heat a large non-stick frying pan.
Add the chopped onions and diced sweet potato.
Cook for a couple of minutes, then add all three spices.
Stir together and continue to cook for a further two or three minutes.
Pour in the beer, followed by the drained and washed lentils and the tinned tomatoes.
Bring the pan up to the boil, then reduce the heat and allow to simmer for 15-20 minutes or until the sweet potato is tender.
Meanwhile fold the tortilla wraps in half and fit together in a deep baking tray before placing in the oven for 10 minutes set like a tacos shell.
Final touch for the chilli is to add the dark chocolate and stir before spooning in the chilli and topping with grated cheese and sour cream.
Served with wedges of lime to squeeze over the top.
