Vietnamese Noodles with Ostrich

Ingredients

Serves 2

250g or 2 Ostrich steaks (you can also use venison or beef steak if you prefer

2 tbsp Olive oil

Salt and pepper for seasoning

200g Japanese Udon noodles

1 thumb ginger

1 Garlic clove

2 limes

1 red chilli

100ml Light sauce sauce

1 Bunch spring onions

1 tbsp Fresh coriander

1 tbsp Sesame seeds

Here’s how

Cook the noodles in a pan of boiling water for five minutes, then drain and leave to one side.

Pat the steaks dry with some kitchen roll, then drizzle in olive oil and season well with plenty of sea salt and pepper.

Pre heat a non stick frying pan and place the meat in to cook for 3-4 on each side or until the steak reads 55c using a probe.

Meanwhile to make the dressing peel and chop the ginger and garlic as finely as possible then place in a bowl with the juice of both limes.

Remove the seeds from the red chilli and cut into match sticks, then into small dice before adding to the bowl.

Finally add the soy sauce and stir together.

At this point it is a good idea to taste the dressing to make sure it is right for you, there wants to be a nice balance of saltiness from the soy and tang from the lime.

Adjust the dressing if you need to, then once the steak is cooked lift it out of the pan and place in the dressing to rest and absorb the flavour of the dressing

Chop the spring onions and mix together with the noodles.

Pour the dressing over the noodles and stir together.

Carve the rested steak and serve with the dressed noodles.

Finish with fresh coriander and sesame seeds.
