Pizza Pockets
Serves 4
4 tortilla wraps
1 400g tin of chopped tomatoes
1 150g mozzarella ball
6 slices of salami or 1 roasted red pepper
8 olives
8 basil leaves
2 tbsp grated Parmesan cheese
1 beaten egg
To make the tomato sauce pour the tomatoes through a sieve to remove the excess water.
Spoon the sauce into the centre of each wrap, top with the mozzarella, olives and salami (or roasted pepper if you don’t want the salami)
Add the basil and Parmesan cheese before finishing with a drizzle of olive oil and black pepper.
Brush the edges of the wraps with the beaten egg, then fold in the slides and roll up the wraps to encase all the ingredients inside.
Heat a non stick frying pan and cook the parcels for 2-3 minutes on each side or until golden.
