Each month we will be highlighting what’s in season and also share one of our favourite recipes using some of these great ingredients. An excellent lean source of protein, duck is a great versatile meat that can be used in many different dishes from around the world and is used most commonly used in Asian cuisine but is become increasingly popular in all countries.
Duck meat has a stronger flavor than other varieties of poultry and the breast meat is usually preferable over the leg meat as the leg tends to be fattier and therefore is not as healthy.
Duck breast with potato and apple rosti, apple purée and roasted figs
