Ingredients
250g plain flour
1/2 teaspoon baking powder
70g white granulated sugar
4g fast action dried yeast
125ml boiling water
1 tsp vegetable oil
Lettuce leaves
Method
In a medium bowl, mix together the flour, baking powder and sugar. Dissolve the yeast in 1 tsp of the water and add to the flour, add the rest of the water. Mix together to combine. Add the oil, and knead for 10-15 minutes until you have a smooth texture.
Cover with a dampened tea towel for up to 2 hours until the dough has doubled in size
On a floured surface, divide the dough into 8 equal pieces and roll the out into a 3 inch thick rectangle with rounded edges.
Fold the rectangle in half lengthwise, and place on a lettuce leaf. Cover lightly with oiled plastic wrap or a damp towel, and repeat with the rest of the dough pieces. Let proof for 1 hour 15 minutes, until slightly puffy.
Bring a pot of water to a steady boil and fit your bamboo steamer in just above the water. Place the baos in the steamer, cover, and steam for 8 minutes until puffed up.
Remove from the steaming basket and allow to cool. Once cooled add your filling of choice.
