Boxing day breakfast, sorted.
Ingredients:
1 tsp olive oil
150g chopped chorizo sausage
200g cooked potatoes
150g cooked Brussels sprouts
4 free range eggs
20g butter
1 tbsp capers
1 handful of coriander
Method:
Pre-heat a non-stick frying pan on a medium heat.
Add the oil and chorizo to the pan and cook for a few minutes.
Crush the cooked potatoes.
Add the crushed potatoes and cooked sprouts to the pan and cook for 5-10 minutes, try not to stir the pan around too much so the potatoes and sprouts crisp up while cooking.
Make space in the centre of the pan and crack the eggs into so that they cook on the base of the frying pan.
Add the butter, chopped chilli and capers.
When the egg whites have set and the yolks are runny sprinkle over the chopped coriander and serve.
Season with black pepper before serving.
