Ice Cream Cake with Berry and Lime Crumble

 Ice Cream Cake with Berry and Lime Crumble 

Makes 1 loaf cake 



1 pint Fully thawed ice cream 

200g Self raising flour 

10g Baking powder 

2 Bananas sliced 

80g Frozen mixed berries

50g Oats
1 Lime

30g Icing sugar 



 Pour the Melted ice cream into a measuring jug, making sure it comes up to the 1-pint mark, then transfer the ice cream into a mixing bowl. 

 Add in the self-raising flour and baking powder, followed by the sliced bananas. 

 Fold the ingredients together carefully, being careful to not over mix as you don’t want to develop the gluten in the flour. 

 Pour in the frozen berries and stir together.

Transfer the cake mix into a non-stick loaf tin and sprinkle the oats over the top of the cake. 

Bake in a pre-heated oven 180c for 35-40 minutes or until fully baked. 

When the cake is fully baked mix together the sugar and lime juice before drizzling over the cake.
