Ingredients
1 pumpkin
Olive oil
Salt for seasoning
Method
Scoop seeds out of your pumpkin and separate from the flesh
Rinse the seeds in cold water using a fine mesh sieve, pour on a baking tray and leave to dry
Once dry, using a mister, spray seeds with the olive oil and sprinkle with salt. Stir around until all the seeds are coated.
Bake at 180°C / 350°F / Gas mark 4 for around 7 minutes, or until seeds are light, crispy and golden
For different flavours, substitute the salt for garlic salt, black pepper, chilli flakes or even something sweet like cinnamon and brown sugar
