Avocado, Basil and Coriander Pesto Pasta
Ingredients
200g Rigatoni Pasta
100g Spinach
2 Cloves of garlic
1 Avocado
50g Basil
50g coriander
60g Parmesan cheese grated
1 tbsp lemon juice freshly squeezed
3/4 to 1 cup pasta water
1/2 tsp salt or to taste
1/2 tsp pepper or to taste
Method
Cook the pasta in a saucepan until soft.
When the pasta is close to finishing, add in a blender, 2 cloves of chopped garlic, 50g basil, peeled and pitted avocado, 1tbsp of lemon juice, salt and pepper and ¾ of a cup from the pasta water. Blend until smooth and pour into the drained pasta. Once all mixed add in the finely chopped coriander and mix again.
