Ingredients
100g/3.5oz dark chocolate, chopped
80g/2.8oz butter, chopped
1 cup plain flour
2 tablespoons cocoa powder
¼ teaspoon bicarbonate of soda
1 cup caster sugar
1 egg, beaten lightly
Method
Place the chocolate & butter in a small saucepan, place over a low heat and stir with a spoon until just melted. Pour mixture into a mixing bowl.
Sift the flour, cocoa & bicarbonate of soda into the chocolate mixture, then stir the sugar & egg until combined.
Cover & refrigerate for about 15 minutes or until mixture is firm enough to roll into balls.
Preheat the oven to 180°C/356°F.
Line a baking tray with some baking paper.
Take a tablespoon of the mixture & roll into a ball, then place on baking tray. Repeat with remaining mixture, allowing 8cm between each ball for the cookies to spread.
Place the tray in the oven & bake for 15-20 minutes.
Cool the cookies on the tray before decorating.
