Makes 1 omelette
Ingredients:
1 tsp olive oil
3 egg whites
Salt and pepper
1 handful of chopped kale
2 tbsp of cooked peas
1/2 avocado, sliced
Method:
Place the egg whites into a mixing bowl and then whisk, add a little salt and pepper until light and fluffy, it should only take 15 seconds.
Preheat a non-stick frying pan with a little oil.
Pour the egg whites into the pan and roll the mixture around the pan.
Leave the omelette to cook for 1 minute to help it set.
Add the kale, peas and sliced avocado and continue to cook.
When the omelette is firm and turned white, carefully fold the omelette in half and serve.
