Ingredients
400g of chicken breast or thigh, diced
1 tablespoon of olive oil or coconut oil
Juice of 3 oranges and zest from 2 of the oranges
1 tablespoon of honey
½ teaspoon of ground ginger
½ teaspoon of black pepper
¼ teaspoon of salt
2 tablespoons of plain flour
Method
Griddle or bake the chicken in the oven until it is cooked throughout. If you do bake the chicken in the oven, then transfer to a frying pan once cooked.
Whisk the orange juice, zest, honey, salt, ginger and pepper together in a small bowl until combined and pour it into the pan with the cooked chicken.
Allow the juice mixture to come to the boil.
Turn the heat down and sieve the flour into the pan, cook for a further minute. The sauce will quickly thicken and become sticky.
Serve with rice, steamed vegetables or salad.
