Ingredients
2 boneless fillets of salmon
Cooking spray
230g mayonnaise
2 tablespoons freshly squeezed lemon juice
1/4 cup chopped dill
Sea salt and black pepper to season
A few springs of rosemary to garnish
Method
In a bowl, whisk the mayonnaise with the lemon juice and dill and season with the salt and pepper. Refrigerate until the salmon is cooked
Heat the grill pan over a medium-high heat and coat with a little cooking spray
Once up to heat, cook the fillets for 4 minutes on each side
Serve with boiled potatoes, remove sauce from the fridge and drizzle over the salmon and potatoes. Garnish with the rosemary. (Sauce can be heated slightly first on the hob if preferred)
