15 Minute Salmon with Avocado Cream


1 lime (juiced)

2cm piece of ginger

2 salmon fillets

2tbsp low-fat yoghurt

½ avocado (peeled and de-stoned)

1tbsp chopped coriander

Handful of rocket



Mix the yoghurt, avocado and coriander in a blender.

Carefully grate the ginger and mix with the lime juice then brush over the salmon.

Grill on a high heat on a non-stick baking tray for 5 minutes or until cooked.

Top the salmon with the avocado cream and serve with a handful of rocket.
