Prawn Curry!
Ingredients
150g Cooked King Prawns
100g Spinach
3 Cloves of garlic
1 Onion
200g chopped Tomatoes
1 tsp of cumin
1 tsp garlic powder
1 tsp Paprika
1 tsp turmeric
225g Quark
Fresh Coriander
100g Brown rice
Method
Depending on what rice you are using, now might be time to start the rice if you are using our rice cooker or, if you are using a microwavable pouch, leave this until closer to the end.
In a fry pan, fry off the onions on a gentle heat. Add in finely chopped garlic and reduce the heat (you don’t want to burn the garlic). Then add in your washed prawns and all the seasonings including some chopped coriander (make sure there is some left for serving). Once softened add in the washed spinach. Continue to simmer for 2 mins. Once the spinach has weltered add in the 200g of chopped tomatoes. Then add in the quark and continue to stir until cooked.
Microwave your rice if this is the type of rice you have bought and serve the rice on a plate with the curry. Finish off with a sprinkle of coriander.
