Tomato & Halloumi Bake


350g small tomatoes

250g halloumi

4 shallots

Olive oil

Black pepper for seasoning


Pre-heat oven to 200 degrees Celsius.

Cut the tomatoes in half and place in an oven safe dish. Finely chop the shallows and add them to the dish.

Add a splash of olive oil and season with black pepper.

Slice a 250g piece of halloumi in half and place on foil. Drizzle with olive oil then pull the edges of the foil together to form a parcel. Additional pieces of halloumi can be added depending on how many people you are cooking for.

Clear space in the centre of the dish and place the parcel inside.

Place the parcel in the dish.

Bake for 35 minutes.

Taking care, remove the halloumi from the foil and serve.
