Ingredients
250g plain flour
1 teaspoon bicarbonate of soda
115g butter
115g brown sugar
2 beaten eggs
500g bananas
Pinch salt
Method
Preheat the oven to 180°C. Lightly grease a loaf tin.
In a large bowl, combine flour, bicarbonate of soda and salt.
In a separate bowl, mix together butter and brown sugar. Stir in eggs and bananas until well mixed.
Stir banana mixture into flour mixture and stir only for a minute. Pour mixture into prepared loaf tin.
Bake for 60 to 65 minutes, until a cake tester inserted into centre of the loaf comes out clean. Leave to cool in tin for 10 minutes, turn out onto a wire cooling rack to allow to cool completely.
