Ingredients:
500g blackcurrants
300g sugar
1 lemon
300ml water
Method:
Place the blackcurrants into a large non-stick saucepan with the sugar, water and lemon juice.
Heat the saucepan until it reaches boiling point.
Turn the heat down to simmer and cook for 5-10 minutes.
Remove from the heat and leave to cool for 10 minutes, then pass through a sieve to remove the skins.
Carefully pour the cordial into a preserving bottle and keep in the fridge for up to 4 weeks.
