Ingredients
To make the cake
1 cup of plain flour
1 cup sugar
½ cup cocoa powder
½ tsp baking soda
¼ tsp baking powder
¼ tsp salt
¾ cup milk
⅓ cup vegetable oil
1 tsp vanilla extract
1 egg
To make the ganache
6 oz. chocolate chips
¼ cup whipping cream
1½ tbsp sugar
1½ tbsp Golden syrup
Method
To make the cake:
Preheat oven to 180°c and prepare an 8” cake tin.
In a large mixing bowl whisk together flour, sugar, cocoa powder, baking soda, baking powder and salt.
Slowly add milk, oil and vanilla and continue to beat until well mixed. Add the egg and beat again.
Transfer your smooth mixture to your prepared cake tin and bake for around 40 minutes or until a cake tester comes out clean when inserted into the centre of your cake.
Remove the cake from the oven and allow to cool in the tin for 10 minutes before transferring the cake onto a wire rack to cool completely.
To make the ganache
In a saucepan bring the cream, sugar and golden syrup to the boil.
Place the chocolate chips in a mixing bowl and pour the boiled mixture over the chocolate chips. Leave the mixture for a few minutes to melt the chocolate before you begin stirring.
Stir the mixture until smooth and glossy.
Your cake should still be on the wire rack, place a piece of parchment paper under the rack, pour the chocolate ganache over the cake allowing it to run down the sides of the cake until the entire cake is covered.
Allow the ganache to set before serving.
