Sugar-Free Blueberry and Banana Muffins


1 medium egg

230g banana, mashed

125ml vegetable oil

125ml water

250g wholemeal flour

1 tsp. bicarbonate of soda

2 1/4 tsp. baking powder

150g blueberries


Preheat an oven to 180 C / Gas mark 4. Grease 12 muffin cups, or line with paper muffin cases.

In a large bowl, mix the egg, mashed bananas, water and oil. Once combined, mix in the flour, bicarbonate of soda and baking powder until mostly smooth (small lumps of banana is fine).

Gently fold the blueberries into the mixture.

Bake in the preheated oven for about 12-15 minutes or until golden on top.
