Ingredients
3 large eggs
A handful each of basil, mint, chives, parsley, tarragon, dill, and chervil
Olive oil
Sea salt and black pepper
Chilli flakes (optional)
Method
Crack the eggs into a bowl adding a pinch of salt and pepper and whisk to combine
Using your hachoir, finely chop the herbs and add them to the egg mixture
Heat your frying pan on a medium setting and add the butter
Once the butter has melted pour in the egg mixture
Once the omelette is almost cooked, add the herbs (and chilli flakes if desired) to one side and then flip the other side over it so you have a half circle and cook for another 30 seconds
