Gluten Free Sausage Rolls


250g gluten free self raising flour, extra for dusting 

1/4 tsp xanthan gum

1/2 tsp baking powder

70g butter

85g grated smoked cheese (you can use regular cheddar)

85ml milk

6 sausages, skins removed 

Fennel tops

2 tsp fennel seeds

1 tbsp milk to brush the dough

50g parmesan cheese, grated

Salt and Pepper 

Heres how

Preheat the oven to 170C

In a bowl, add the flour, xanthan gum and baking powder. Mix together until evenly distributed.

Rub the butter into the flour until it resembles fine breadcrumbs. Season with salt and pepper

Add the grated cheese and then start pouring in the milk a bit at a time until you have a dough than can be rolled out (not too wet and not too dry)

Take a sheet of parchment, fold it in half. Dust one side with a little bit of flour then take half your dough and place it on the parchment and dust a little more flour on top of the dough.

Fold the parchment paper back over the dough and using a rolling pin, roll the dough until about the thickness of a £1 coin.

Unfold the parchment to reveal the dough. Down the centre of the dough place 3 of the stages and top with half of the fennel tops and fennel seeds.

Fold the dough over the sausages, then use a fork to press the dough edges together.

Trim the excess dough and cut the sausage roll into 6 portions

Brush each sausage roll with a bit of milk and sprinkle over some parmesan cheese.

Repeat this method with the other half of the dough and remaining ingredients.

Bake for about 18-20 minutes of until the sausage roll base is golden brown and the sausage is fully cooked through
