Ingredients
4 Flatbreads or wheat tortilla wraps
125g Mascarpone cream
1 Garlic bulb
1 Fresh red chilli
1/2 Fennel bulb
200g Sliced ham
1 Handful of parsley
1/2 tsp cracked black pepper
70g Parmesan cheese
Here’s how
Cut the root off the garlic and squeeze it out into a mixing bowl.
Add the chopped red chilli and season with black pepper.
Shred the ham into small pieces and add to the mixing bowl along with the chopped parsley.
Add a drizzle of extra virgin olive oil and put it to one side.
Layout 2 of the flatbreads and spread them both with the mascarpone.
Top the flatbreads with a layer of the ham mixture and top with freshly grated parmesan cheese.
Top with the remaining flatbreads and cook either in the oven straight onto the shelf of the oven or, toast in a large dry frying pan on each side until golden and crisp.
When toasted leave to stand for 2 minutes, then cut into 6 portions and enjoy!
