Ingredients
Wild rocket
Mango
Avocado, diced
30ml extra-virgin rapeseed oil
15ml white wine vinegar
Juice and zest of 1 lemon
2 tbsp. dijon mustard
Method
Gently toss lettuce, avocado and mango in a bowl
Pour oil, vinegar, mustard and lemon juice and zest into a dressing bottle
Pour over lettuce mixture and toss again to combine
