Red Cabbage and Apple Coleslaw


1 small red cabbage

3 large carrotts, shredded

3 onions, sliced

1 apple chopped

1 tbsp. dijon mustard

1 garlic clove, crushed

3 tbsp. olive oil

2 tbsp. apple cider vinegar

2 tbsp. lemon juice

1 tbsp. honey


Place shredded cabbage, carrots, apple and onions in a large salad bowl. Set aside.

In a mixing bowl, whisk together the dijon mustard, garlic, oil, apple cider vinegar, lemon juice, honey and whisk until well combined.

Pour dressing over the cabbage mixture and toss to combine.
