Ingredients
4 large red onions
2 tbsp olive oil
150 ml red wine
60 ml balsamic vinegar
1 tbsp light muscovado sugar, or caster sugar
Method
In a large saucepan, heat the olive oil, and add the onion with a pinch of salt.
Place the lid on top of the pan and cook over a low heat for around 15 minutes, or until the onions are soft and translucent.
Add the red wine, balsamic vinegar, sugar, season with black pepper.
Place the lid on top of the pan and reduce down for about 15 minutes over a low heat.
Take the lid off, increase to a medium heat and cook for a further 10 minutes or until you have a sticky jam-like consistency.
Transfer in to glass preserving jars.
