Rhubarb & Apple Baked Oats

Ingredients 

Serves 4

2 Granny Smith apples (peeled and chopped, core removed)

300g Rhubarb chopped 

500ml Milk (can’t be non dairy if you like)

1 tsp vanilla extract

110g Honey 

100g Large rolled oats 

2 tbsp Chia seeds or flax if preferred 
45g Flaked almonds 

20g Hazelnuts 

20g Walnuts 

 

Here’s how 

Preheat oven to 180°C.

Place the apple and rhubarb into an ovenproof baking dish.

Pour the milk, vanilla and 1 tablespoon of the honey in a large bowl and whisk together, then pour over the rhubarb.

Place the oats, seeds, nuts and remaining honey in a large bowl and stir well.

Sprinkle over the fruit mixture. 

Place the baking dish on a baking tray and cook for 30-40 mins or until golden and crisp.
