Ingredients
360g Dried spaghetti pasta
1 tbsp salt
2 tbsp olive oil
50g Butter
1 large clove garlic or 2 small
200g Roasted chunks of pumpkin
75g Walnuts
1 tbsp Chopped fresh rosemary
4 Sage leaves (1/2 tsp dried)
100g Parmesan cheese
Here’s how
Place the pasta into a large pan of salted boiling water and cook for 9 minutes.
Meanwhile the olive oil and butter into a large non-stick frying pan.
Cook the chopped garlic and cook for2 minutes.
Add the chunks of cooked pumpkin to the pan and cook for 4-5 minutes.
Add the herbs, walnuts and parmesan cheese.
Lift one ladle of cooking water from the pasta and add to the frying pan to create a buttery, creamy sauce.
When the pasta is cooked, use a pair of tongs to lift it out and add it to the frying pan.
Stir the pasta together and serve with more grated parmesan cheese.
