Sticky Vegetable Kebabs


1 ½ tbsp. olive oil

1 tsp. wholegrain mustard

1 tbsp. runny honey

1 yellow pepper sliced

12 baby mushrooms

1 large red onion, cut into wedges

1 courgette, cut into slices about ½ inch thick

12 cherry tomatoes


Take six skewers and thread the vegetables evenly along each, 2 mushrooms, 2 tomatoes and a little of the other vegetables in between

In a small dish, combine the oil, mustard and honey, using a basting brush, brush the mixture over each kebab generously

Cook in a preheated oven at 180°C for 20-25 minutes until the vegetables are slightly charred and the glaze has caramelised
