Summery Strawberry Scones


3 cups self-raising flour

4 teaspoons caster sugar

Pinch of salt

60g butter

1 1/4 cups milk

250g strawberries, chopped, squished or muddled

TOP TIP: If you do not like strawberries, try this with orange pulp or blueberries instead.

Extra milk, for brushing

Cream of your choice, strawberry jam and strawberries, to serve


Step 1

Preheat oven to 220C (non-fan assisted) / 200C (fan assisted). Lightly grease a large baking tray and dust with flour.

Step 2

Sift flour, sugar and salt into a large bowl. Add butter. Mix and kneed butter into flour until mixture resembles breadcrumbs. Add milk and half the chopped strawberries. Stir quickly, but gently with a large spoon to form a soft dough. Turn dough out onto a lightly floured surface. Knead three or four times or until smooth.

TOP TIP:  Don’t go nuts with your kneading, the dough only needs a little loving otherwise your scones will be too tough!

Step 3

Press dough into a 2cm-thick by 6cm diameter round. Repeat to make a total of approx 20. Any extra dough can be shaped to your liking. Place scones onto pre prepped baking tray and brush tops with a little extra milk.

Step 4

Bake for 15 minutes or until golden, remove from oven and leave to rest for 10 minutes. Serve with cream, jam and remaining strawberries or fruit of choice.
