Tomato, Olive and Basil Bruschetta


1 tablespoon extra virgin olive oil

2 garlic cloves

4 diced tomatoes

20 basil leaves

12 black olives

8 slices ciabatta


Preheat the grill.

Place the ciabatta slices on a large baking tray and drizzle with olive oil. Cut the garlic cloves in half and rub the cut side on bread slices and the discard cloves.

Mix tomatoes with 1 tablespoon olive oil, olives and basil in a large bowl.

Grill the ciabatta until golden brown. Remove from the oven and top with the mixture.
